Basic Arborio Rice Risotto Recipe

Ingredients

  • 5 cups chicken broth (or chicken stock or salted water)
  • ⅓ cup finely chopped shallots
  • 1 tablespoon butter or olive oil
  • ½ cup dry white wine, room temperature
  • ½ teaspoon minced garlic (about one garlic clove)
  • 1 cup Arborio rice
  • Kosher salt, to taste
  • 1 cup finely grated parmesan cheese, divided
  • Freshly ground black pepper, to taste

Directions

1. Keep the medium saucepan to medium heat, bring the broth to a low boil, then lower the heat to low, keeping the broth just below a simmer. You need the broth to be about the same temperature as the rice when it is cooking.

2. In a large skillet , heat butter in medium-low, then add the onion and cook until it become softened and translucent, approximately 4 minutes. Add the garlic and stir continuously until it become fragrant, approximately 30–60 seconds. 

3. Add rice to onion-garlic mixture, season with salt, and stir to combine. Continue stirring till rice is well coated and starting to become translucent, 2–5 minutes.

4. Put about ½ cup warm broth and a splash of wine into the rice mixture. Stir frequently until the rice has fully absorbed the liquid. Add the left broth in ½ cup increments, following each addition with a splash of wine and letting the rice to absorb liquid between additions, approximately 25–35 minutes.

5. Take the pan from heat and put ½ cup cheese and pepper, stirring to combine. cover and let it to rest five minutes. Serve with extra cheese.
